This week, cocktail maestro Norm Owen rescues the Margarita from its rainbow-coloured, artificial syrup-infused purgatory, and brings it back to its simple – and delicious – origins.
Fill a cocktail shaker with ice.
2oz good quality tequila blanca (white, i.e. not aged). Try Tromba, or Espolon.
.75oz lime juice
Shake and shake until it is very cold, then strain into a coupe, or over ice into a rocks glass.
If you desire a salt rim, rub the outside rim of the glass with a piece of lime, then roll it onto a plate filled with kosher salt (kosher salt is a gentler flavour than table salt).
